Disney World 2012 - Tuesday - Epcot Center

Today they went to Epcot Center and had a blast! Nana said they girls are not taking naps during the day but are having NO trouble sleeping at night! :-)

Disney World 2012 - Monday

I think the girls are EXCITED!!!

Disney World 2012 - Friday through Sunday

Lauren and Kieran left Friday headed for Disney World with Nana and Papaw! This is Kieran's first time and Lauren's second to Disney. I think these girls are excited! Below are some pictures we got from Papaw's phone.

They are staying at Fort Wilderness so there are animals for them to ride! I just know Lauren LOVED this!!!

I was a little worried about how Colton would do without his sissy but so far he is LOVING it! Saturday the three of us went to Sam's Club, Target and then had lunch at Grub's Uptown. I don't think Colton has stopped talking/singing/dancing since Lauren left! I think he is just so used to Lauren talking for him that he has a new freedom! We are really enjoying the one on one time with him and I hope he feels the same. :-)

16 Weeks Baby #3

16 weeks already! Crazy how fast time flies! We are doing great.

I added a few 'regular' clothes pics because my husband is such a great photographer that his pics make me look smaller than I actually am (it's all about the clothes people). Thanks babe! That's why I love you!


16 weeks with Lauren, Colton and Baby #3

How Far Along
: 16 weeks
Size of baby: Turnip (5 inches long and about 5 ounces)
Maternity Clothes: Starting to wear maternity clothes (mainly jeans because my normal jeans don't fit unless they have a rubberband and that's just not as comfortable) but thanks to dresses, long tanks and leggings I'm not all in yet. I did buy a new pair of work pants that are a size bigger than I normally wear and so far so good.
Gender: Not finding out this time!

Movement: I felt the first official movement last week and my second offical movement today! Little tiny kicks!
Sleep: Sleeping is ok but I do have pain in my hips which makes me feel 90 years old! I have to switch sides at night to help with the pain. I get up to pee probably 2 times a night.
Symptoms: n/a
What I miss: Wine and Sushi
Cravings: Salt, spicy pickles & chocolate (not together though!)
Best Moment this week: Starting to really get a more noticable belly bump!
What I am looking forward to: My appointment in 2 weeks to hear baby's heart beat again!

Mexican Chicken Ring

This is a new recipe I'm going to try this week thanks to Jenna's Journey Blog.

Ingredients:
3 cooked & shredded chicken breasts
1 cup grated Cheddar cheese plus some for sprinkling on top
1 cup grated Monterey Jack cheese
¾ can of Rotel & all of the juice
3/4 cup light sour cream
1 package taco seasoning
2 rolls of regular sized crescent rolls
1 lime (juice)
2/3 cup finely crushed tortilla chips plus some for sprinkling on top


Combine chicken, Rotel, tortilla chips, sour cream, taco mix, cheese and 2T of lime juice.
Unroll and separate crescent dough. Arrange triangles on a baking sheet making a circle with wide ends overlapping in the center and points toward outside. Spread chicken mixture evenly into the center of the ring.


Fold the points of the crescents in and over. Sprinkle with remaining cheese and tortilla strips and bake at 375 for 20 minutes.

14 Week Dr Appt. - Baby #3

We got to hear the heart beat this morning! Baby’s HR was in 160’s and he just said I was measuring above the bone which is where I should be. When I looked in the chart for an exact # (I had to meet with the insurance lady this morning so she had my chart…I normally don’t go digging through my chart!) he literally wrote “above pelvic bone” ha! He just said “it’s hard to measure at this stage”. I have gained 5 lbs. I asked the dr if it was normal to be showing a month sooner this time and he just said “yes your muscles have been stretched 2 times before”. Great! Anyone want to get a tummy tuck with me after this baby! Maybe we can get a group discount! Just kidding of course…

What’s funny about the 5 lbs is the Dr said “you gained 5 lbs over the holiday’s” and I said “No, I didn’t…my scale at home says I didn’t gain any weight…they weighed me on the other scale last time and it said I lost weight”…but I was so confident about it I said “I’ll take the challenge and weigh on the other scale to show you the scales are off (because at 36 weeks with Colton I weighed on 'the other' scale and it showed I lost 5 lbs when I knew I had not! So I just knew this scale was off...again)” so since we have a good relationship with him he was like “ok because I do need to know if the scales are different”…so we went and I weighed on the other scale…it was 4 lbs! Ha! So only 1 lb different! I guess I need to get a new scale at home! LOL I guess the good news is that I show 5 lbs at home and now 5 lbs at the Dr office. I had gained weight...then lost it at my last appt so I guess I just gained it back this month. :-) Kraig just laughed at me!

Colton Funny

Colton has not been sleeping through the night well lately because he is getting more teeth in finally! So last night he woke up. Kraig went in to put him back down and he was not good with this...So Kraig decided to bring him into our bed. At first he was happy about snuggling...but after a bit decided it was not his thing and said "I want little bed" and sat up like 'ok take me to bed' so Kraig and I laughed and said "you want your bed" and he said "yes!" So Kraig took him back to bed and he slept the rest of the night. :-) I've just never known a kid to say "I want my bed" over their parents! LOL This boy keeps me on my toes!

Chicken Tortilla Soup

This is Kraig's new favorite soup! I found it on allrecipes.com.

Prep time - 20 minutes
Cook time - 20 minutes
Serves 8

Ingredients


  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • 2 teaspoons chili powder

  • 1 teaspoon dried oregano

  • 1 (28 ounce) can crushed tomatoes

  • 1 (10.5 ounce) can condensed chicken broth

  • 1 1/4 cups water

  • 1 cup whole corn kernels, cooked

  • 1 cup white hominy

  • 1 (4 ounce) can chopped green chile peppers

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1/4 cup chopped fresh cilantro

  • 2 boneless chicken breast halves, cooked and cut into bite-sized pieces

  • crushed tortilla chips

  • sliced avocado

  • shredded Monterey Jack cheese

  • chopped green onions

Directions



  • In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft.

  • Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.

  • Stir in corn, hominy, chiles, beans, cilantro, and chicken. Simmer for 10 minutes.

  • Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, and chopped green onion.

Kid Updates

So I have not done an update on the kids in a while so I thought I would do one now. Click here for the one last January!

Lauren - 4 years and 7 months


  • Loves school and can't wait for Kindergarten in August!

  • Wears a size 4 or 5T in clothes because 4T is too short

  • Weighs about 37 pounds

  • Wears a size 10.5 or 11 shoe

  • Can count up to 30 or 40 (I can't remember)

  • Knows how to write all her letters and can spell anything if you just tell her what letters.

  • Knows how to spell/write her name.

  • Loves to sing all type of songs and knows more words than I do!

  • Loves to help Colton with anything (even when he doesn't ask for her help).

  • Doesn't really like to nap anymore...but will still sleep when we make her have 'quiet time' in her room.

  • Loves being the older sister and getting to do things that Colton doesn't get to do yet. Most of the time we have to do these secretly...so Lauren thinks that's the coolest thing ever and will whisper things to me about it (with a huge smile on her face) so Colton doesn't hear!

  • Asks "what are we doing today" everyday! When I say "go to school" she follows it up with "what about after school" when I tell her we are going to come home and play she says "NO I want to go somewhere!" Apparently our house is boring now. :-)

  • Loves to put on lip gloss!

  • I think one of her favorite activities outside of the house is to go to the movie theater.

  • Goes to bed around 8 or 8:30 and sleeps until 6:30 ish.

  • Is already having the "this person said they don't like me" at school issues! Really people...she is 4?!?!?! This scares me for what my future holds.

  • Still attends Dance one night a week although we have been on a 2 week break for Christmas.

  • Can do big puzzles all by herself now and loves to show them off afterwards.

  • Is excited about baby #3 and just says "I hope it's a girl because I already have a brother"

Colton - 2 years and 2 months



  • 'Mr Personality' is what I like to call him now. I think December was his shining month! That kid just made a 180 switch and boom...he laughs, talks, sings, etc all the time now!

  • Wears 24 month stuff because the 2T is too long

  • Weighs about 28 pounds

  • Wears a size 6.5 wide shoe

  • Wears a size 5 diaper

  • Has 11 teeth (see below)

  • Loves to be goofy!

  • Gets silly when he is tired (which is what I used to do) so he just laughs at random things when he is tired (then of course the crying follows if it's too late afterwards).

  • Has learned to sing songs like ABC's and Jesus Loves Me.

  • Can count to 10 with a 13 and 14 afterward

  • TALKS constantly now!

  • Goes pee pee on the potty every once in a while now at home and most of the time at school (I have been lazy about it with him so I have not started potty training yet...but will before baby #3 arrives).

  • Is finally getting more teeth! His 11th tooth (bottom right beside his bottom middle) broke through this week and I think 12, 13 and 14 are about to come in as well.

  • Is going through a Shrek phase now like Lauren did when she was 2. He can't get enough Shrek!

  • Loves trains now along with cars. Thank goodness I was thinking we were going to be limited to car toys forever!

  • Loves to push a car though the house and then make a sliding stop.

  • If he doesn't want to wear something he will say "that too big".

  • If he doesn't want to play with something he will say "that broken".

  • Is a momma's boy right now which I love!

  • Crys when he gets his feeling hurt or gets in trouble like "mom are you mad at me?"

  • Knows there is a baby in my belly but is confused because he can't see it yet.

We love these kiddos more than they will ever know and feel so blessed to have them in our lives! Happy Tuesday folks!

Chicken Roll Ups

I found this recipe on Jenna's Journey blog.

Ingredients


  • 1 pkg cream cheese (8oz)

  • 1 pkg crescent rolls (6 ct)

  • 2 shredded cooked chicken breasts (or 3 if you want it more chickenish than cheesy)

  • 1.5 C grated cheddar cheese

  • 1 C grated Monterey Jack

  • 1/4 t salt

  • 1/4 t pepper

  • bread crumbs

  • 1/4 stick melted butter

Steps



  • Bake 3 chicken breast (recipe calls for 2 but I had 3 in a package so I used all 3) at 375 for 30 minutes. You can also boil the chicken breasts by just pulling them straight out of the freezer if frozen and throwing them in warm water, and let it boil for about 40 minutes.

  • Meanwhile, I let a block of cream cheese thaw out.

  • Mix the cream cheese with cheddar, Monterey jack, salt and pepper.

  • Once the chicken is cooked, shred it and mix it into the cheese mixture.

  • Put the mixture on big, buttery, flaky crescent rolls and roll them up making sure the croissant is sealed so the chicken mixture is covered.

  • Brush them with melted butter and top them with bread crumbs.

  • Bake at 350 for 20-25 minutes!

To reheat, just place in a 325 degree oven for 15 minutes
