Stove Top Easy Chicken Bake


  • 1 pkg stove top traditional sage stuffing mix

  • 1-1/2 lb. boneless skinless chicken breast, but into 1-inch pieces (normally 2 or 3 chicken breast)

  • 1 can condensed cream of chicken soup

  • 1/3 cup sour cream

  • 1 can corn drained

  • 1 can green beans drained


  1. Heat oven to 400 degrees. Prepare stuffing mix as directed on package; set aside.

  2. Mix chicken, soup, sour cream and vegetables in 13x9 inch baking dish; top with stuffing.

  3. bake 35 minutes or until chicken is cooked through.

makes 6 servings

20 Weeks - Baby #3


Me with Lauren, Colton and baby #3 at 20 weeks. Upper stomach has definitely popped sooner with each pregnancy.


Stats

How Far Along: 20 weeks

Size of baby: Banana (7 inches long and about 11 oz)

Maternity Clothes: yes as well as dresses, long tanks and leggings.

Gender: Not finding out this time!

Movement: I feel the baby a few times a day now!

Sleep: Sleeping is ok but I still have (and will continue to have) pain in my hips which makes me feel 90 years old! I have to switch sides at night to help with the pain. I get up to pee probably 2 times a night.

Symptoms: haven't really had many this past week or two other than the hip pain when sleeping

What I miss: Wine and Sushi

Cravings: Spicy food!

Best Moment this week: Just feeling my baby move everyday.

What I am looking forward to: Our ultrasound in 2 weeks.

Valentines Day Parties

Tuesday the kids school had Valentines parties at snack time. First up was Colton's party. They had painted shoe boxes earlier that day to hold all their valentines and candy from each kid. We got there a little early so we got to sit through story time as well. As you can see all of Colton's classmates are basically the same age!

Prayer Request Update

I wanted to post and update on the previous Prayer Request post. If you missed it click here to read about it.

First I would like to say that God will never give us more than we can handle! Sometimes it's not what we want...but He gives it to us because other's are not as strong.

My uncle Larry (my mom's brother) - The bypass surgery went great and he went home Sunday (instead of Monday like they originally thought). He is still weak, but overall doing great! The recovery/rehab process is about 3 months.

My mom - The original stress test results came back as normal, however with her families history and everything that has happened in the last week, she told her Dr that her daughters would like for her to have the dye stress test to be sure. The Dr said "well I understand why they are concerned!" So she will meet with Dr Green (the same Dr that did my uncles heart cath) in the next few weeks to discuss the next steps.

My aunt Brenda (my mom’s sister) - The biopsy results are back and it is cancer. The good news is 3 years ago it was stage 3. This time it is only stage 1. She will NOT have to have chemo and will have a mastectomy on Feb 28th.

Happy Valentines Day - Our Love Story

I saw this on another friends blog and thought 'what a great idea' so here goes...

1. How long have you and your significant other been together? We have been together for 15 years and 2 months. I can't believe it's been that long! I was 16 and Kraig was 19 when we met.


2. How did you meet? {What's your "love" story?} We worked at Harps Grocery Store in Springdale on 412 West together. He stocked the shelves and I was a cashier.


3. If married, how long have you been married? If not, is this the guy you hope to marry? {do tell} We have been married for 8 years and 8 months!


4. If you are married, where did you get married at? Big or small wedding? If not, where would you like to get married? And will it be big or small? We got married in Vegas Baby! We had a small wedding at the Canterbury Chapel with a total of 13 people (including us) attending. Then we had a reception in Tontitown the weekend after we returned.


5. Do you have any nick-names that you call one another? Do share! The only nickname we have is Babe...and that's for both Kraig and I to each other.


6. Name 3 things you love most about your honey. The fact that he is my voice of reason. When I'm going crazy he can calm me down and bring me back to reality. Sometimes not in a manner that I like...but it works. He is also the best husband and father a girl could ask for. He loves playing with the kids and making them laugh.


7. Tell us how he proposed? Or your ideal proposal? He took me back to the place we met and proposed...here's the story. We were supposed to have dinner at his mom's one night and he came to pick me up and my parents were not home. He made up some excuse that dinner was now at a later time. We just kept waiting and waiting...finally my dad got home and he said he needed to talk to my dad about trucks. So he went outside and they talked about 'trucks'. We then got in his truck and drove to Harps where we met because he had to pick up a few groceries for his mom. We pulled in the parking lot and he said "we are not here to get groceries" and I was like "what are we doing then". He said some sweet words about how I was the love of his life and how he wanted to spend the rest of our lives together...pulled out the ring and asked me to marry him. I instantly started crying, with a few "Oh my Gosh's" in there and said "YES!" We then went back to his mom's house where they were waiting to congratulate us! We were all crying! It was awesome!


8. Is he a flowers and teddy bear kind of guy for v-day, or strawberries, champagne, and rose petals? He is the type that would get me flowers and teddy bears...IF that's what I wanted. However he knows me well and knows I personally think it's a waste of money...so he takes me to dinner...or gets me a new purse or gift certificate so I can go and buy new clothes!


9. Are you a sunset dinner on the beach kind of girl, or pop a movie in and relax on the couch? I think I've always been a movie type of girl (look at the industry I work in) but before kids I could appreciate a nice sunset dinner on the beach as well! Now any chance to snuggle up next to my babe on the couch watching a movie together is the perfect night for me!


10. Tell us one thing you'd like to do with your significant one day. If you could do anything? Go anywhere? Go back to Hawaii or St John or Ireland with a trip to Scotland so Kraig could play golf. Go to Germany, Italy, maybe New Zealand or Alaska!


11. Tell us what you plan on doing on this Valentine's Day. We are going to dinner and then see the Eli Young Band! I'm excited!


12. Are you asking for anything this Valentine's day? Nope...we have been together long enough that we are pretty bad about just getting our own things when we need them...so no special request this year.


13. Give us one piece of advice of keeping a relationship strong and full of love. Remember what you loved about each other from the beginning. Remember to talk about things because without communication there will be problems. Remember to laugh at each other and yourself! Enjoy those quiet moments together...even if it is 5 short minutes! Flirt as much as possible...not only is it good for you, but your kids are watching as well and they learn from your actions. If you are in a good relationship hopefully they will be too someday!

Steak & Farfalle Pasta with Creamy Tomato Sauce


Steak & Farfalle Pasta with Creamy Tomato Sauce
Here is what you will need to make this tasty dish:




  • 5 cloves garlic, finely minced, divided


  • 1/4 cup red wine vinegar


  • 1 tsp Dijon mustard


  • 1/2 tsp fresh ground black pepper


  • 1 lb lean eye round steak, cubed


  • 16 oz whole-wheat farfalle pasta


  • Olive oil cooking spray


  • 1 medium yellow onion- finely diced


  • 1 28-oz jar or can no-salt-added crushed tomatoes


  • 1 1/2 tsp Italian seasoning


  • 1 tsp dried basil


  • 8 oz low-fat sour cream

Marinade -




  • steak cubed


  • In a bowl, whisk together 3 cloves garlic, vinegar, Dijon, cinnamon and pepper.

Pour marinade over steak cubes in another container, cover and refrigerate for at least one hour. (You can also leave steak to marinate overnight.)

Cook farfalle according to package directions. Drain and set aside.

Drain steak cubes and discard marinade. Heat a large cast-iron skillet or nonstick skillet over high heat for 1 minute. Reduce heat to medium-high, mist with cooking spray and saute steak until browned on each side, about 4 minutes total.

Remove steak from pan and set aside.

Mist same pan with cooking spray again, add onion and remaining 2 cloves garlic and saute until brown, about 2 to 3 minutes.

Add tomatoes and reduce the heat to medium low.

Add seasoning, basil, sour cream and combine.

Cook for an additional 2 to 3 minutes, then mix in reserved steak and cook for 2 more minutes, until the meat and sauce are completely warmed.

Serve 1 cup farfalle (or penne...) with 3/4 cup steak sauce. Garnish with an additional sprinkling of Italian seasoning, if desired.


Serves: 8
Hands-on time: 30 minutes
Total time: 1 hour

Slow Cooker Cilantro Lime Chicken

I found this recipe on this blog

This chicken recipe could be used for a number of meals:
You could eat it over rice,
add some cheese and tortilla chips,
eat in a taco salad,
or as an easy way to spice up boring tacos!
(which is exactly what we did!)

So, if you have a busy day ahead of you or you just don't want to go through a lot of hassle cooking dinner one night, I highly recommend this EASY, delicious recipe.
Slow Cooker Cilantro Chicken

Here is what you will need:




  • One 24oz jar medium or mild salsa


  • Juice from one lime


  • 1/4 cup fresh cilantro, chopped


  • One package taco seasoning


  • 2 jalapeno peppers, finely chopped (optional)


  • 4-6 boneless chicken breasts

Yes, that is all you will need to make the chicken.
You will have to get other ingredients, depending on what you plan on making with this chicken... Such as taco supplies, nacho supplies, rice, etc.


In a slow cooker, mix together:
The salsa, juice from one lime

1/4 cup chopped cilantro, taco seasoning, and chopped jalapenos

Add the chicken breasts (either frozen or defrosted) to the slow cooker and coat with the salsa mixture. Cover and cook on low for 6 hours.
THAT.IS.IT.
That is all you need to do... then you can walk away and forget about it until dinner!

For Taco's shredded the chicken and spoon some of the salsa mixture over top. Then put the chicken in a tortilla and added our favorite toppings!!

While Lauren and Kieran were at Disney world they got to meet Sleeping Beauty and Belle! Lauren's favorite princess is Sleeping Beauty right now so I was so happy to see these pictures (from the people at Disney). It looks like they enjoyed meeting real princesses!

18 Week Check Up - Baby #3

We are growing!

18 weeks with Lauren, Colton and Baby #3

We went to the Dr Tuesday morning for our 18 week check up. Everything looked great! HR of 158, Measuring 17 cm, weight gain of 3 more pounds (9 total so far). Dr did an ultrasound to let Kraig know the sex of the baby (Dr Reiter is so nice to us)...BUT baby was not positioned right so he could not tell. :-) Sorry babe...I know you want to know, but as much as you want to know is as much as I don't want to know.

How Far Along: 18 weeks
Size of baby: Mango (6 inches long and about 1/2 pound)
Maternity Clothes: yes as well as dresses, long tanks and leggings.
Gender: Not finding out this time!
Movement: I feel the baby a few times a week now but still not every day. He/She was moving around like crazy in the car yesterday. I was just sure Kraig would have been able to feel on the outside but he wasn't in the car with me.
Sleep: Sleeping is ok but I still have (and will continue to have) pain in my hips which makes me feel 90 years old! I have to switch sides at night to help with the pain. I get up to pee probably 2 times a night.
Symptoms: starting to feel a little heartburn
What I miss: Wine and Sushi
Cravings: Sweets!
Best Moment this week: Hearing my baby's heart beat of 158!!!
What I am looking forward to: Our ultrasound in 4 weeks.
